COMPANY OVERVIEW & JOB DESCRIPTION

 

Sous Chef wanted for busy theatre style kitchen at Drake & Morgan flagship, The Folly

We are currently recruiting for Sous chef for our Biggest restaurant & Bar, The Folly at Monument, as sous will be able to manage a large brigade, run the pass and manage cost of sales all while developing your skills around innovation and attention to detail, cooking fresh seasonal products as well as creating and showcasing daily specials.

The business turns c£140,000 net a week with food sales around c£40,000 net, consisting of Breakfast, Lunch, Dinner & Private Hire.

Roles and responsibility include the following

  • Able to work as part of a team
  • Passion and dedication for producing great tasting fresh food using locally sourced ingredients
  • Ability to manage GP's and food stocks
  • Comfortable working across all sections
  • Good standards of health and safety and hygiene regulations
  • Ability to deputise for Head Chef in his absence
  • Baking experience preferred but not essential
  • Proven knowledge of all Food Safety practises, to include HACCP, COSHH
  • Deputising for the Head Chef.

The role is c55 hours a week, over five days, split over 8 shifts
